Ripping DVD's with episodes?

You mean rip the episodic dvd to other video format and only want to get a single file?
All our converter software will output every episode as a single file, you need use the third party tool to join them to a single one.
If your output file is mp4, you may refer to http://www.idealdvdcopy.com/merge-mp4.htm to learn how to do that.
If you want to combine multiple .avi files to a single file, you can use "Peck's Power Join". It's a freeware and you can download it from http://www.divx-digest.com/software/pp_join.html .
